- Grape variety: 100% pecorino
- Growing system: guyot
- Harvest time: first half of september
- Harvest: hand-made in small boxes
- Wine-making: the grapes are gently desteamed and pressed. The must is putted in steel tank
- Fermentation: Spontaneous fermentation, with indigenous yeasts, at 16°C
- Ageing: 6 months in steel tank before bottling for 6 months
- Alcohol: 12.5%
